Torta Diplomatica


This layered dessert gets its name from the cream that is used within. Crema Diplomatica combines pastry cream with chantilly cream to make a light and airy and filling. It contains a light sponge soaked with alkermes liqueur and together they are sandwiched between thin layers of puff pastry. The top is dusted with icing sugar and  decorated with Chantilly cream and fresh berries. This dessert is my personal favourite and is a ‘dolce’ that is celebrated across the whole of Italy regardless of regional variations.
