It has a moist chocolate sponge, layered with a rich double chocolate ganache, mascarpone cream and macerated strawberries. For those amongst you that love a bit of liqueur with your chocolate, you can choose to add a strawberry rum to your sliced strawberry filling. It is then decorated with, you guessed it more chocolate ganache, mascarpone and fresh strawberries and should you choose, a personalised chocolate plaque.

Crema Diplomatica combines pastry cream with chantilly cream to make a light and airy and filling. It contains a light sponge soaked with alkermes liqueur and together they are sandwiched between thin layers of puff pastry. The top is dusted with icing sugar and decorated with Chantilly cream and fresh cherries.

I named this cake as ‘traditional’ as it’s the cake of my childhood. Every birthday, anniversary, christening and even weddings would be celebrated with this cake, and when you taste it, you will see why it remains the all-time favourite Italian celebration cake. The sponge is the lightest “Pan di Spagna” you will ever taste; it is soaked with a beautifully scented homemade rum syrup (from a traditional secret recipe) and its marriage with a smooth vanilla pastry cream and Chantilly cream coating makes for a melt in the mouth sensation. The cake is decorated with your choice of fresh fruit and bigne՛, and there is the option to add chopped nuts and chocolate too.
